Description
A vibrant salad featuring apples, cranberries, kale, and beef bacon, balancing sweet and savory flavors for a nourishing meal.
Ingredients
Scale
- 1 bunch of kale
- 1 large apple (preferably tart such as Granny Smith)
- 1 cup of dried cranberries
- 4 slices of beef bacon
- 1/2 cup of chopped walnuts or pecans (toasted)
- 1/4 cup of crumbled feta cheese (optional)
- Olive oil
- Balsamic vinegar
- Salt and black pepper to taste
Instructions
- Cook the beef bacon in a skillet over medium heat until golden. Transfer to a paper towel to absorb excess fat and chop into bite-sized pieces.
- Prepare the kale by removing the stems and roughly chopping the leaves. Massage with olive oil for about 2-3 minutes until softened.
- Slice the apple into thin slices or bite-sized chunks.
- Combine the massaged kale, chopped apple, cranberries, and toasted nuts in a large bowl. Add the chopped beef bacon and toss gently.
- Dress the salad by whisking together olive oil, balsamic vinegar, salt, and pepper in a separate bowl, then drizzle over the salad.
- Finish with feta cheese if desired, and serve immediately.
Notes
Best enjoyed fresh but can be stored in the refrigerator for up to 2 days. Store dressing separately for crisper texture.
