Description
A comforting and creamy potato soup, perfect for cozy gatherings or solo meals, delivering rich flavors with a touch of nostalgia.
Ingredients
Scale
- 4 large russet potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups beef broth (or vegetable broth for a vegetarian option)
- 1 cup heavy cream or milk
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup chopped green onions or chives
- Salt and pepper to taste
- Olive oil or butter for sautéing
Instructions
- Heat olive oil or butter in a large pot over medium heat. Sauté onions until translucent, about 5 minutes. Add garlic and cook for an additional minute until fragrant.
- Incorporate diced potatoes and pour in beef broth. Increase heat to boil, then reduce to simmer. Cook until potatoes are tender, roughly 20 minutes.
- Blend the soup until smooth using an immersion blender or a countertop blender in batches.
- Return the blended soup to the pot, adding cream or milk. Heat gently without boiling, and season with salt and pepper to taste.
- Serve hot, garnished with shredded cheddar cheese and green onions, if desired.
Notes
For dairy-free options, swap cream with plant-based cream or additional broth. To thicken without cream, mash some potatoes or add a cornstarch slurry.
