Description
A comforting skillet dish blending classic Italian caprese flavors with tender chicken and pillowy gnocchi.
Ingredients
Scale
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 pound gnocchi (fresh or shelf-stable)
- 2 cups cherry tomatoes, halved
- 1 cup fresh mozzarella, cut into cubes
- 3 tablespoons olive oil, divided
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until they are browned and cooked through, about 7–10 minutes. Remove from the pan and set aside.
- Add the remaining tablespoon of olive oil and garlic to the skillet. Sauté briefly until fragrant, approximately 1 minute.
- Stir in the cherry tomatoes and oregano. Cook until the tomatoes begin to soften, about 3–4 minutes.
- Add the gnocchi, stirring gently to combine. Pour in enough water to cover the gnocchi halfway.
- Return the chicken to the skillet, cover, and simmer until the gnocchi are cooked through, roughly 4–5 minutes.
- Remove from heat and fold in the mozzarella until it begins to melt.
- Serve hot, garnished with fresh basil leaves.
Notes
For optimal results, use high-quality extra virgin olive oil. Substitute cherry tomatoes with canned diced tomatoes if out of season.
