Description

A comforting Irish soup that combines the savory flavor of cabbage and creamy potatoes with smoky beef bacon, perfect for cold weather.

Ingredients

Scale
  • 4 slices of beef bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 1 small head of cabbage, chopped
  • 6 cups low-sodium beef broth
  • Salt and pepper to taste
  • Optional: Chopped chives for garnish

Instructions

  1. Cook the diced beef bacon over medium heat until crisp. Remove and set aside, leaving rendered fat in the pot.
  2. Add the chopped onion to the pot and sauté until translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional minute.
  3. Incorporate the diced potatoes and chopped cabbage, stirring to coat with the onion and garlic mixture.
  4. Pour in the beef broth, bring to a gentle boil, then reduce to a simmer. Cook for 20 minutes or until the potatoes are tender.
  5. Season with salt and pepper to taste. Use a potato masher to partially mash the potatoes for a thicker soup, if desired.
  6. Stir in the reserved beef bacon and heat through before serving.

Notes

Let any leftover soup cool before storing. Can be kept in the refrigerator for up to three days or frozen for up to three months.
