Description
A perfect balance of sweetness, acidity, and heat defines this vibrant honey lime chicken dish, making it a great choice for any occasion.
Ingredients
Scale
- 4 chicken thighs (bone-in or boneless)
- 1/4 cup honey
- 1/4 cup fresh lime juice
- 3 garlic cloves, minced
- 1 fresh chili (or chili flakes for spice)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Combine honey, lime juice, minced garlic, and chili to create a marinade in a bowl.
- Season the chicken with salt and pepper, then add it to the marinade, ensuring each piece is well coated. Allow it to marinate for at least 30 minutes, or preferably, overnight.
- Preheat a skillet or grill over medium-high heat and add olive oil.
- Remove the chicken from the marinade, reserving the marinade for later use. Sear the chicken skin-side down until browned, about 5-7 minutes.
- Flip the chicken and cook on the other side until fully cooked through, about another 5-7 minutes.
- Add the reserved marinade to the pan in the last few minutes of cooking, allowing it to bubble and thicken slightly.
- Garnish with fresh cilantro before serving.
Notes
Cook chicken to an internal temperature of 165°F for safety and tenderness. This dish pairs well with jasmine rice or quinoa.
