Description
This recipe combines tender steak bites with loaded baked potatoes for a delicious and comforting meal.
Ingredients
Scale
- 2 large russet potatoes
- 1 pound sirloin steak, cut into bite-sized pieces
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup chopped fresh chives
- Optional toppings: jalapeños, cooked beef bacon bits, or a drizzle of hot sauce
Instructions
- Preheat the oven to 400°F (200°C). Scrub the potatoes, then pierce them multiple times with a fork. Lightly rub with olive oil and sprinkle with salt. Bake for 45-50 minutes or until tender when pierced with a fork.
- Season the steak pieces with salt and pepper. Heat the olive oil in a skillet over medium-high heat. Once hot, add the steak and sear for 3-4 minutes until golden brown and cooked to medium doneness.
- Once the potatoes are done, carefully cut them open lengthwise, fluff the insides with a fork, and season with salt and pepper.
- Top the opened potatoes with steak bites, cheese, sour cream, and chives.
- For added richness, place the loaded potatoes under the broiler for 2-3 minutes to melt the cheese before serving.
Notes
These loaded potatoes can be customized with toppings like jalapeños or bacon bits. Leftovers can be stored in an airtight container for up to 3 days.
