Description
A hearty bowl featuring roasted sweet potatoes and savory ground beef, seasoned to perfection.
Ingredients
Scale
- 2 medium sweet potatoes, diced
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper, to taste
- Fresh herbs (cilantro or parsley) for garnish
Instructions
- Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes in olive oil, salt, and pepper before spreading them in a single layer on a baking sheet. Roast for about 25 minutes, or until they are tender and lightly caramelized.
- Heat a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it up with a spatula. Season with smoked paprika, cumin, salt, and pepper. Cook until browned and fully cooked through, approximately 7-10 minutes. Stir in minced garlic during the last minute of cooking.
- Once the sweet potatoes are finished, remove them from the oven and combine them with the cooked beef in the skillet, mixing gently to combine.
- Serve the mixture in bowls, garnishing with fresh herbs.
Notes
Consider adding a dollop of Greek yogurt or avocado slices for extra creaminess. This dish is best served warm.
